Despite the name, this company's original shop is on 30th Avenue in Astoria, open since 2002 and since multiplied across the neighborhood and beyond. The bagels are soft and moist, with a tender crumb rather than a hard crust, and the flavor list goes well past the usual.

Try the french toast bagel — eggy and only mildly sweet — and the jalapeño asiago, whose heat arrives late. For a full breakfast, the house Classic: nova, scallion cream cheese, tomato, capers and red onion on an everything bagel.

Editor’s tip

Get a french toast bagel plain, no schmear, to taste what it is doing.
