Doraon 1.5 Dak Galbi

Chuncheon-style dakgalbi stir-fried on a tabletop pan, finished with fried rice scraped from the bottom.

Dakgalbi comes from Chuncheon: chicken, cabbage, sweet potato and rice cakes tossed in gochujang and stir-fried on a wide iron pan in the middle of the table. Doraon builds its menu around that pan, and the cooking is half the entertainment.

Order it plain or under a blanket of melted cheese, and save room for the finish — when the chicken is mostly gone, the leftover sauce is turned into fried rice right on the pan, scraped up until it crackles. The chicken feet have a following too.

Editor’s tip

Order the dakgalbi for two and ask for the fried rice finish when the chicken is nearly gone.
