MURRAY HILL, QUEENS

Han Joo Chik Naeng Myun & BBQ

Arrowroot cold noodles — including a version with raw skate — and pork belly done a half-dozen ways.

The name says what it is: chik naengmyeon, cold noodles made with arrowroot, darker and chewier than the usual buckwheat, and a barbecue built around pork belly. The room is plain and practical, a neighborhood place on a block of neighborhood places.

The noodle menu runs from mul (in icy broth) and bibim (tossed in chili sauce) to hwe naengmyeon, topped with slices of raw skate in a hot, sweet dressing. On the grill, the pork belly comes in many guises — fresh, soybean-paste-marinated, green-tea or garlic — and reviewers describe a version cooked on a tilted crystal slab, the fat running off into a trough of kimchi. Thin-sliced duck is another regular order.

Editor’s tip

Order the hwe naengmyeon if you like a little funk, and a plate of doenjang-marinated pork belly for the grill.
