Behind sliding glass doors at the back of 50 Norman, chef Yuji Tani — owner of HOUSE in Tokyo — runs an intimate counter that feels like dinner at a friend's home. Since December 2022 it has served a nine-course menu that moves between Japanese and French technique, with a particular devotion to dashi and fermentation.

The menu follows the seasons; recent courses have included charcoal-grilled shoyu koji duck, lobster spring rolls and a strawberry sundae to close. Add the drink pairing of sakes, wines and teas, and arrive on time — the meal starts when everyone is seated.

Editor’s tip

Set a reminder for the monthly Resy release and add the sake-and-tea pairing.
