FLUSHING, QUEENS

Joe's Steam Rice Roll

Stone-ground cheung fun steamed to order in the New World Mall — the stall that started a rice-roll renaissance.

Joe Rong started steaming Cantonese cheung fun from a tiny Flushing storefront in 2017 and set off a small rice-roll renaissance across the city. At his New World Mall stall the batter is still ground from rice in-house, poured thin into steel drawers, steamed to order, and folded around beef, shrimp, or egg while you watch — a sixty-second production line with a cult following.

The rolls land silky and barely sweet, finished with soy and a scatter of sesame; weekend waits can stretch toward the half-hour because every order is made fresh. It is counter service in a food court, and it outclasses most sit-down dim sum in the borough.

Editor’s tip

Beef with egg is the benchmark order; watch the batter poured and steamed before it reaches you.
