Six tables, seventeen seats, no bathroom, no alcohol and no credit cards: Lillo is a one-man show on Henry Street, a block off Atlantic Avenue. Giampietro "Lillo" Remia, the chef-owner, has run it since 2017, greeting you, taking your order and cooking it.

The rigatoni alla gricia is the dish — guanciale, pecorino and pepper, nothing else — and the cacio e pepe is the other Roman classic to know. Add grilled artichokes and broccoli rabe, and the beet gnocchi if you want something less familiar. Take a tiramisu home.

Editor’s tip

Bring cash and go early on a weeknight; with six tables, waiting is part of the deal.
