Attaboy
No menu, no sign: knock on the Eldridge Street door and let the bartender decide.

IllustrationBehind an unmarked door on Eldridge Street, in the room that was once Milk & Honey, Attaboy is run by veterans of that bar and keeps its spirit. The space is closet-sized, and you knock to come in.
There is no menu. Tell the bartender what you like — a spirit, a mood, sweet or bitter — and they build a drink around it, usually a sharp riff on a classic. Most people end up standing, and most people don't mind.
Editor’s tip
Go right after opening on a weeknight, and describe a flavor rather than naming a drink.
