LOWER EAST SIDE, MANHATTAN

Ha's Snack Bar

Snails in tamarind butter and fish sauce in everything — a candlelit Vietnamese-leaning wine bar on Broome Street.

A tiny Broome Street room with fogged windows, a white curtain at the door, paper lamps and candlelight, an open kitchen and a short bar. It grew out of Ha's Đặc Biệt, a pop-up, and it is not strictly a Vietnamese restaurant — it is a wine bar where fish sauce turns up in almost everything.

Snails are the order. They come in garlic and tamarind butter with baguette for the sauce, in the spirit of a Saigon ốc stall by way of a Paris bistro. Add oysters with green chili, the cilantro-heavy onion soup built on a pho-like broth, chicken liver pâté on toast and branzino with mắm nêm. The wine list is eclectic in the right way.

Editor’s tip

Arrive before the doors open for a bar seat, and order the snails first so there is bread left for the butter.
