A counter-service slice shop on Forest Avenue with a few tables under red checkered cloths, fluorescent light, paper plates and family photos on the walls — several of the pies are named for the people in them. Nothing about the room prepares you for the crust.

The dough ferments for days, and it bakes up thin and crackling with big air pockets, closer to a good baguette than a typical slice. Start with a plain cheese slice, which is the benchmark, then the Fulgieri: no tomato, just caramelized onions baked into provolone and pecorino.

Editor’s tip

Order a plain slice and a Fulgieri together — one red, one white — and eat them while they're hot.
