Corima is chef Fidel Caballero's contemporary Mexican restaurant on a quiet stretch of Allen Street, where the Lower East Side runs into Chinatown, and it brings the cooking of Northern Mexico to New York with real precision. Caballero grew up between Ciudad Juárez and El Paso and cooked at Martín Berasategui's three-star restaurant in Spain and at Contra before opening here; Corima earned a Michelin star within its first year. The name comes from a Tarahumara idea meaning a circle of sharing, and the room keeps that spirit, intimate and unshowy, with the attention on the plate. Bon Appétit named it one of the best new restaurants of 2024, and it has ranked on North America's 50 Best list.

Featured by the YouTuber New York Turk in 2025, Corima is one of the more approachable starred meals in the city. As of October 2026 the website lists a tasting menu of roughly ten to thirteen courses at $140 per person, an optional spirit pairing at $90, and an à la carte menu alongside it. A July 2026 sample menu included a sope topped with golden osetra caviar, duck enmoladas, turbot with an epazote pil-pil, and squab, though dishes change often. The bar leans heavily on sotol, the desert spirit of Chihuahua, so ask for a pour you have not tried. Reserve ahead, and choose à la carte if you want to meet the kitchen without committing to the full progression.

Editor’s tip

Ask the bar for a sotol flight or a single pour with your first courses; the spirit list is one of the deepest in the city.
