HELL'S KITCHEN, MANHATTAN
Kochi
Sungchul Shim's eight-course Korean skewer tasting menu on Tenth Avenue.
See current Google rating & reviews ↗Kochi is the Korean word for skewer, and chef Sungchul Shim's Hell's Kitchen restaurant, opened late in 2019, built a Michelin-starred tasting menu around the idea: Korean royal cooking by way of street food, served from an open kitchen on Tenth Avenue.
The menu runs eight courses, with skewers appearing throughout, from a delicate raw-fish hwe course to a bibimbap with a riot of textures; an abalone course can be added. It is a short, lively format, proof that a starred tasting menu need not take all night.
Editor’s tip
Pair it with a pre-theater evening — the format is brisk.
