Blacked-out windows on Elizabeth Street, a buzzer, a curtain: Torien is the New York sibling of Torishiki in Tokyo, and the entrance is part of the show. Inside, executive chef Hideo An works the grill like a pianist, turning, fanning and brushing skewers over binchotan from Kishu. It holds a Michelin star.

The yakitori omakase runs thirteen courses through every part of the chicken, organs included, with a few vegetable skewers between. The charcoal matters as much as the bird; its smoke becomes the room's perfume. Start with the nikomi if it is offered.
