The Institute of Culinary Education trains professional chefs at Brookfield Place, and its recreational classes put the same kitchens and chef-instructors in front of everyone else. The pasta classes are the ones to book. In Handmade Filled Pastas, a four-hour session, you make dough by hand and stuff and shape lemon-ricotta ravioli with sage brown butter, roasted red pepper tortellini in fra diavolo and beef agnolotti in brodo. Pasta 101 is the gentler start, with fresh dough and simple sauces like puttanesca and Alfredo.

Classes are hands-on and capped at 16 students per chef; you cook in teams and sit down together at the end to eat what you made, and most classes pour wine with the meal. Handmade Filled Pastas is listed at $150 as of October 2026, with sessions on October 31, November 13 and December 19, 2026; a Couples: Homemade Pasta class on December 5 is listed at $300. Book through ICE's recreational calendar; popular classes sell out weeks ahead, especially in winter. Have a light snack beforehand, since the meal comes at the end. It makes a good date or a gift.
