A few blocks north of the boardwalk on Neptune Avenue, Toné Café is named for its oven: a tone, the round, deep clay oven that Georgian bakers slap their dough against, much like a tandoor. The puri that comes out of it — a long, crackling loaf with a chewy middle — is on every table. The café has served Brighton's Georgian community for more than two decades, with a small dining room and a bakery next door selling cakes and pastries.
Begin with adjaruli khachapuri, the boat-shaped bread filled with molten cheese, butter and a raw egg yolk you stir in at the table. Follow with khinkali, broth-filled beef dumplings with a peppery filling — hold them by the knot and sip before you bite. On a cold day, order kashi, a garlicky beef soup Georgians swear by after a long night. Drink a tarragon soda or a glass of Georgian amber wine.
Editor’s tip
Sit down rather than grabbing to go, and order something baked in the tone with every meal.
