Bazaar Meat is José Andrés's theatrical take on the steakhouse, set inside the Ritz-Carlton New York, NoMad, in the space that was previously home to his restaurant The Bazaar. It opened in the fall of 2025, joining sister locations in Las Vegas and Chicago, and it shares their sense of showmanship: rolling carts, tableside cooking and a menu that swings between simple Spanish-inspired staples and intricate, playful bites. The heart of the kitchen is wood fire, with large cuts kissed by smoke and flame. The mood is celebratory rather than stuffy, the sort of room where a birthday or a big announcement feels right at home, and where the meat program is treated with the same care as a fine wine list.

The beef is the reason to come. The menu features a deep American Wagyu program, including Wagyu and Black Angus crosses from Texas, heritage Akaushi and California Washugyu, plus a "Tasting through Japan" in which Wagyu and Kobe beef are seared tableside on a hot ishiyaki stone. For the full show, José's Ultimate Tasting Menu runs through several courses chosen by Andrés himself. Bazaar Meat was featured by the YouTuber New York Turk in 2025, shortly after it opened. Reservations open online about a month ahead. Expect a splurge, and leave room to share: the large cuts are built for the table.

Editor’s tip

Order one large-format cut for the table and fill in with small plates rather than a steak each.
