WEST VILLAGE, MANHATTAN

Semma

Rural Tamil cooking at full heat — the most celebrated Indian kitchen in New York.

Vijay Kumar cooks the food of rural Tamil Nadu — the dishes of his childhood, not the restaurant canon — and the result is the most celebrated Indian kitchen in the country. Southern Indian cooking means rice and lentil batters, curry leaf, tamarind, coconut and pepper, and Semma pushes it hard: dosa dusted with gunpowder-style chili podi, nathai pirattal of snails in a dark, spiced gravy, and goat and seafood dishes cooked to village heat.

The room on Greenwich Avenue is warm and loud, the service quick to explain what you are eating, and the menu unapologetic about spice. It holds a Michelin star, Kumar won the James Beard award for Best Chef: New York State in 2025, and the New York Times named it the city's best restaurant that year. Plan ahead: tables go fast.

Editor’s tip

Trust the servers on spice level and order at least one dish you have never heard of — the snails are the classic test.
